14 February is the one service of the year where the customer photographs the table before eating. And a careful setting for two costs around €0.60 — covering, candle and napkin included. On a two-cover menu sold at €90, that is under 0.7%. So the figures are never the brake: anticipation is, because these references go fast in early February.
What gets seen, and what does not
Not every item on a table carries the same weight in how the customer perceives it. The order below is what they notice, not what it costs.
| What the customer sees | Item | Cost for two covers |
|---|---|---|
| First, before sitting down | The covering — its material and its cleanliness | €0.25 with a runner |
| As soon as they sit | The candle and its flame | €0.07 with 6-hour tealights |
| When unfolding | The napkin | varies with the format |
| Never, unless it goes wrong | Everything else | — |
The runner deserves a word: it is a band laid down the centre of a bare table, not a full-width cloth. It costs a quarter of the price, changes between two services, and lets the wood of the table show — which has become the dominant visual code in restaurants.

What gets prepared the night before, and what cannot be improvised
14 February concentrates a year of bookings into one service. Three things are prepared the night before, and a fourth cannot be recovered at all.
The covering, cut in advance. A roll of runner is cut to table length the evening before. Doing it at setting time costs twenty minutes you will not have. The candles, out and counted. A six-hour tealight lasts the whole service, but it still has to be on the table before the first customer — not lit on request between two courses. The finger wipe, laid with the cutlery. It is a setting gesture, not a service one. Added mid-meal, it loses all its effect. The second service. That is the one that cannot be improvised: if you turn tables twice, you need a complete changeover set of covering. A table re-dressed on a stained band cancels out everything else. The covering calculation is simple and done once: a two-cover table needs about 1.20 m of runner. A set of 6 rolls of 48 m therefore covers around 240 tables — counting two services, comfortably enough for a Valentine's evening and the services that follow. At €0.303 per metre, a complete changeover for a second service costs under €1 for twenty tables. Anticipating, because February is short
- Two constraints come together on 14 February: demand concentrates on a single service, and red and burgundy references go first at every wholesaler. An order placed mid-January avoids having to fall back on white.

Frequently asked questions
What does a careful Valentine's table setting cost ?
About €0.32 for two covers with a runner and a candle, and €0.57 in its full form with a finger wipe. On a menu for two sold at €90, that is under 0.7% of the selling price.
Runner or full-width tablecloth ?
The runner is a band laid down the centre of a bare table. It costs about a quarter of a full-width cloth per metre, changes between two services and lets the table top show. The full-width cloth is still the right call when the top is damaged or mismatched.
How long should a candle burn for one service ?
A 6-hour tealight covers a full service without replacement. For a business running two sittings back to back or opening continuously, long-burning models avoid having to return to the table mid-meal.
When should you order for 14 February ?
Mid-January. Red and burgundy references go first at every wholesaler, and demand concentrates on a single service. Waiting until early February often means accepting you will dress in white.
Disposable or textile for a service like this ?
Spunbond and Airlaid non-wovens give a result close to textile without the laundry cost or the risk of a permanent stain on an evening when every table is taken. Textile keeps the advantage in a fine-dining business that already has its own laundry chain.
