A terrace is not a dining room with tables outside. Three constraints appear there and none of them exists indoors: wind, which carries off anything light, heat, which changes how materials behave, and distance, which multiplies trips back and forth. Each is solved by a choice of consumable, not by organisation.
The three constraints, and their answers
Each is dealt with by a product choice. None is solved by diligence or organisation: that is why they come back service after service until you change the consumable.
| Constraint | What happens | The answer |
|---|---|---|
| Wind | Napkins, light tablecloths and empty cups blow away on the first gust | Weighted roll covering or Airlaid, cups with a wide base, and never an unfolded napkin left waiting on the table |
| Heat | PET warps in direct sun, ice melts twice as fast, fats migrate | Rigid containers for anything left standing, and consumables stored in the shade — a box of cups left in the sun warps into a leaning stack |
| Trips back and forth | Every forgotten item costs a full round trip; service drains away in walking | Everything that can be laid in advance: cutlery in a pouch, finger wipe at lay-up, sauces in individual trays |
The third is the most expensive and the least visible. On a 60-cover terrace service, ten forgotten items mean ten full round trips — twenty to thirty minutes of service lost, depending on the distance. That is the real price of an incomplete lay-up.

Airlaid deserves a word: it is heavier than ordinary paper covering, which is exactly what you want outdoors. A light tablecloth on an exposed terrace is a recurring problem that paper weight solves once and for all.
The forgotten item: shade
One detail that appears on no consumables list and yet governs everything else: is the terrace in direct sun during service hours? If so, two things change. Clear containers left on tables heat up quickly and speed up both melting ice and softening fats. And customers move around through the day, which unbalances service between zones. Planning consumables also means planning for half the tables not being occupied at the same hours.
The storage mistake everyone makes
Summer consumables often get stored wherever there is room: an outdoor store, an unheated room, sometimes an exposed lean-to. That is a bad idea for three families of product.
- Plastic cups and containers warp in a stack under heat. A leaning column does not recover.
- Paper and kraft absorb ambient moisture and lose their stiffness — a soggy cone was never used, it was badly stored.
- Candles soften and stick together long before they melt.
For the rest of the season, our guides to professional food packaging and to cups for events cover the product families, and the cutlery pouch deals precisely with what avoids trips back and forth.
🌬️ Wind carries off anything light
Heavier Airlaid covering, cups with a wide base, and never a napkin left waiting on the table. These are product choices, not organisation.
☀️ Storing in the sun warps things
A column of cups stored in the heat twists and does not recover. Kraft goes soft with moisture before it is even used.

Frequently asked questions
Which table covering stays put in wind on a terrace ?
Airlaid, heavier than ordinary paper covering. Paper weight is what solves it: a light cloth lifts on every gust no matter how carefully it is laid. The roll is cut to the length of the table.
Why do cups warp in the store room ?
Because they are stacked in a warm room. Plastic creeps slowly under load as temperature rises, and a leaning column does not recover. Store summer consumables in the shade, even if the space is less convenient.
How do you cut down trips back and forth on a terrace ?
By laying everything at setting rather than on request: cutlery in a pouch, finger wipe, sauces in individual trays. On 60 covers, ten forgotten items cost twenty to thirty minutes of service in walking.
Does kraft work outdoors ?
Yes for serving, but it handles damp storage badly: it absorbs ambient moisture and loses its stiffness before it is even used. A soggy cone is usually not badly made — it was badly stored.
Is reusable required on a terrace ?
Not for ordinary terrace service — the Walloon rule targets events, not day-to-day trading. But a reusable cup holds better in wind thanks to its wider base and its weight, which is a practical argument independent of the regulations.
