Is 600 litres enough for a restaurant?
For a restaurant serving 40 to 80 covers per day, a 600L positive cabinet is generally sufficient for storing fresh products for the day and the next day. For restaurants with a large menu, two services per day, or high storage needs (catering, advance preparation), the 1200L is recommended. Many restaurants complement it with a saladette for garnish ingredients during service.
What’s the difference with a glass-door cabinet?
Our positive cabinets have solid stainless steel doors, not glass. Advantages of a solid door: better thermal insulation, lower energy consumption, and more stable temperature. Glass doors are for display (bar, buffet) where the customer needs to see the products. For a restaurant kitchen (out of customer view), a solid door is always preferable.
