No, the slide rack trolley is designed for transport and storage, not for oven use. It is used to move trays between the prep station, oven, and blast chiller. Trays are manually transferred from the trolley to the oven, level by level. The 20 levels allow you to prepare an entire production batch before baking in stages.
What is the spacing between levels?
The spacing between the runners is designed to accommodate standard GN containers (depth 65 mm, 100 mm, or 150 mm depending on the model). The 20 levels are evenly spaced. For deep containers (200 mm+), simply use every other level. Refer to the Tournus technical sheet for the exact dimensions of your model.
