Frequently Asked Questions — Professional Cube Ice

How many kg of ice per day does my bar need?

Allow approximately 1 to 1.5 kg of ice per seat in a cocktail bar, and 0.5 to 1 kg per cover in a restaurant. A 30-seat bar requires 30 to 45 kg/day — the IM-45NE (40 kg/day) is perfectly suited. A large bar or hotel with 60+ seats should opt for the IM-65PE (63 kg/day) or the IM-100NE (95 kg/day).

Solid or hollow ice cubes: which should you choose?

Solid cubes (like those produced by our Hoshizaki machines) are the preferred choice for high-end bars and restaurants: they melt slowly, do not dilute drinks quickly, and offer a premium crystal-clear appearance. Hollow cubes melt faster and are suitable for rapid cooling of soft drinks or buffet service. For cocktails, spirits, and premium beverages, solid cubes are the professional standard.
